Cool Ranch, Creamy Blue Cheese & Homemade Caesar Salad Dressings

I feel like you can’t call yourself an adult until you can make a good salad. I’ve tried countless times, but it always ends up limp, soggy and unappetising. I tend to avoid them or just grumpily munch down boring leaves to try and be healthy.

It was about time our dinners were livened up a bit, as we were both bored of having every meal with carrots, peas and broccoli. Although they’re my faves, we really craved good salad during the summer.

Josh got to work in the kitchen, came up with a basic salad and three easy dressings to spice it up. So, here’s what we did:

Basic Salad Recipe

Ingredients | Serves 2 | Takes 20 Minutes

  • ½ – 1 head of red leaf lettuce
  • ½ – 1 head of favourite lettuce
  • 2 slices of stale bread
  • Handful of cherry tomatoes, halved
  • 1 tsp garlic puree
  • ¼ tsp salt
  • ¼ tsp cracked black pepper
  • ¼ tsp cayenne pepper
  • ¼ cup of olive oil

Method

  1. Preheat oven to 180 degrees Celcius
  2. Cut each slice of bread into 16-20 small square croutons
  3. Mix salt, pepper, cayenne, garlic and olive oil in bowl
  4. Add croutons to bowl and thoroughly coat
  5. Place on baking tray and bake for 20 minutes until croutons are nice and crispy
  6. Meanwhile, wash and shred your lettuce, place in large bowl
  7. Toss in your tomatoes and croutons when they are ready
  8. And there you have your basic salad ready for your favourite dressing
  9. Feel free to add of your own touch by adding things like bacon, avocado, pine nuts or Parmesan

So now you have the base to go from, and you can add any dressing of your choice. Here are our three favourite salad dressings, they each take 10 minutes and have been made with a buttermilk, sour cream and mayo base.

 1: Ranch Dressing

Ingredients:

  • 3 tbsp Buttermilk
  • 3 tbsp Sour Cream
  • 2 tbsp Mayonnaise
  • 1 tbsp chopped chives, fresh or dried
  • 1 tbsp chopped parsley, fresh
  • 1 tbsp white wine vinegar
  • 1 tsp garlic puree
  • ½ tsp dried dill
  • ½ tsp salt
  • ½ tsp cracked black pepper

Method:

  1. In a bowl combine buttermilk, sour cream and mayo
  2. Add the white wine vinegar and garlic puree and mix
  3. Add in your chives, parsley and dill
  4. Taste and season with salt and pepper
  5. Mix well and serve with your favourite salad

 

 

2: Blue Cheese Dressing

Ingredients:

  • 3 tbsp Buttermilk
  • 3 tbsp Sour Cream
  • 2 tbsp Mayonnaise
  • 30-50g blue cheese, we used Castello
  • 2 tsp white wine vinegar
  • 1 tsp garlic puree
  • 1 tsp chopped parsley, fresh
  • ½ tsp sugar
  • ½ tsp salt
  • ½ tsp cracked black pepper

Method:

  1. In a bowl combine buttermilk, sour cream and mayo
  2. Add the blue cheese, white wine vinegar, garlic puree and mix well, breaking up any lumps of blue cheese
  3. Add in your parsley and sugar
  4. Taste and season with salt and pepper
  5. Mix well and serve with your favourite salad

 

 3: Caesar Salad Dressing

Ingredients:

  • 3 tbsp Buttermilk
  • 3 tbsp Sour Cream
  • 2 tbsp Mayonnaise
  • 2 anchovy fillets finely diced OR 1 tsp anchovy paste
  • 1 tsp lemon juice
  • 1 tsp worcester sauce
  • 1 tsp garlic puree
  • ½ tsp dijon mustard
  • ½ tsp salt
  • ½ tsp cracked black pepper
  • Optional – 1 tbsp grated parmesan (we prefer to add parmesan to the salad itself)

Method:

  1. In a bowl combine buttermilk, sour cream and mayo
  2. Add the lemon juice, worcester sauce, dijon and garlic puree and mix well
  3. Add in your anchovy fillets, but be careful not to over do it
  4. Taste and season with salt and pepper
  5. Mix well and serve with your favourite salad

  • Oooh nice! i tend to go for the classic olive oil, balsamic vinegar, dash of lemon juice, tsp of honey and half tsp of wholegrain mustard, salt and pepper. shake it all up in a jam jar and serve! Alice xxx
