Recipe: Salmon, Dauphinoise Potatoes & Vegetables

We love Salmon and because it’s so easy to fry with a nice crispy skin it makes it quite versatile, this is why we add it to so many of our recipes. However, the real reason that we wanted to do this recipe is because we have potato a lot but we rarely do anything other than mash or chips and so we really wanted to come up with another delicious potato dish to put in the rotation. The Dauphinoise does make this recipe a little longer than it you were having mash but is totally worth it.

Ingredients | Serves 2 | takes 1 hour

  • 2 pieces of skin on salmon
  • 2 potatoes, peeled and sliced finely
  • 100ml milk
  • 100ml single cream
  • 50g parmesan
  • ½ tsp dijon mustard
  • 2 carrots
  • frozen peas
  • 6 pieces tenderstem broccoli
  • 1 tsp fresh rosemary
  • 1 tsp fresh thyme
  • olive oil
  • salt & pepper

Method

  1. preheat oven to 180°c
  2. heat cream, milk, thyme and dijon in saucepan on medium heat until it starts to bubble
  3. add potatoes, making sure they are all covered, stir to ensure they do not stick to pan
  4. season with salt & pepper
  5. cook for 5 minutes then with slotted spoon, remove potatoes and put into oven ready dish, cover with remains of saucepan
  6. grate parmesan on top and put in oven for 30 minutes
  7. meanwhile, place a frying pan on medium/high heat, season salmon on both sides with salt, pepper and chopped rosemary, coat in olive oil
  8. add carrots to boiling water, season with salt, carrots need around 15 minutes to cook, add broccoli after 7 minutes, then the peas after another 2 minutes
  9. add olive oil to frying pan and place salmon in skin side down and cook for around 5 minutes to get a nice sear on the bottom
  10. once skin is nicely crisp, flip and cook for another couple of minutes to ensure salmon is cooked through
  11. then remove salmon from pan and allow to rest for 5 minutes before serving
  12. remove dauphinoise from oven when cheese is nicely browned and potatoes are bubbling nicely
  13. serve salmon with potato gratin with your boiled vegetables
