Recipe: Spring Summer Cocktails | Jess & Josh Cook

I keep hearing rumours that we’re due a heatwave over the Easter break (although I feel like the papers say that ever year) and with the ever so slight increase of temperature as we enter Spring, what a perfect time to share with you a couple of cocktail recipes.


We were invited by Aldi UK to join their #aldifavouritethings campaign and were sent a few bottles of booze with some cocktail recipes we could make with them, or we could create our own! We took inspiration from the list of recipes and came up with two drinks using what we had left in the fridge.


Lime and Raspberry Prosecco Smash

  • 250ml Belletti Prosecco
  • A handful of raspberries
  • 2 lime wedges
  • 1 tablespoon sugar
  • 250ml tonic water
  • A spring of mint
  • Ice
  1. Mash most of the raspberries (leave a few to pop in your glass later) with the two lime wedges and the sugar.
  2. Fill the glass halfway with prosecco and then top with tonic water.
  3. Chuck in a couple of ice cubes, the rest of your raspberries and garnish with some mint.


Amaretto Cranberry Kiss

  • 30ml Bellucci amaretto
  • 30ml vodka
  • A handful of blueberries
  • A big lemon wedge
  • 250ml cranberry juice
  • 250ml tonic water
  • Mint
  • Ice cubes
  1. In your hipster cocktail glass; add the blueberries, sugar, vodka and amaretto.
  2. Rip up some mint leaves and add to your glass.
  3. Add the cranberry juice and then top with tonic water.
  4. Throw in a couple of ice cubes and the lemon wedge.
  5. Drink!
